Yesterday was super dreary, it poured almost all day! Waking up to rain made me crave a warm and satisfying breakfast… enter protein pancakes.
I’ve made protein pancakes before, but they never turned out fluffy and delicious like a normal pancake. For some reason this morning I had the idea to bled my oats before adding them, to make more of a flour consistency. BOOM! That was the secret ingredient apparently. I was doing it wrong all along.
I bring you my delicious and satisfying Vanilla Almond Protein Pancakes.
Vanilla Almond Protein Pancakes
1/2 c oats (blended to make a flour-like consistency)
1/2 scoop of Vanilla protein powder
1/2 teaspoon of almond extract
Splash of milk
1. Heat griddle and coat with non-stick spray.
2. Blend all the ingredients together (I used my magic bullet)
3. Pour about 1/3 cup on the griddle, wait for it to bubble and flip. About 1 minute on each side.
4. Continue with the remaining batter
5. Top with syrup, yogurt, shredded coconut, fruit, etc!
I topped mine with strawberries and banana Chobani. YUMMMMMM.
It definitely hit the spot!
You know what goes perfect with these pancakes? Beer.
JUST KIDDING. Although I did take a study break to enjoy the sunshine at Golden City Brewery on Tuesday.
But in all seriousness, HOME MADE GREEN JUICE is a delicious addition to a pancake breakfast. MMM!
This one was made with celery, cucumber, spinach, apple and lemon. I blended it up in the blender with water and then strained it through a cloth. I don’t own a juicer, so it’s the ghetto way to make a healthy beverage. Without paying 6.99 at Whole Foods. & dollars for a freaking juice?? GET REAL.
