Is it really already January 9th? Wasn’t it just Christmas? Time is seriously flying by and I feel like it will be summer before we know it! Not that I’m complaining. I can’t wait for trips to the lake, hiking and lots of outdoor adventures.
But for now, let’s focus on January. In an attempt to really get my eating back on track and really learn how to properly fuel my body, I signed up for the Advocare 24 Day Challenge. My CrossFit gym is actually doing a gym-wide challenge, so I’m participating through that.
I was reluctant at first to sign up, but after some research and talking with Colleen, I decided that it was completely safe and NOT some “quick fix” diet. I’ll go into more detail later, but for now I’ll just say that I’m SO pleased with the results that I’m seeing so far. It’s amazing how much clean eating can do for your body and mind.
With that being said, I figured I’d share with you guys a few of my eats from the past week & a half! I’ve got some recipes in the works for the blog, but until then pictures will just have to suffice!
I’m a self-proclaimed egg hater. Not kidding. I gag at the texture and taste of eggs. For some reason though, while in AZ, I was made an omelette. And I liked it. WHAT? Ok, let me rephrase that. I liked the burnt, crispy, onion-y edges. The middle was a little hard to handle.
Regardless, it was a baby step towards not being an egg hater. For some reason I’ve always wanted to like eggs. I thought it would open up the door to 1000000 breakfast recipes and ideas. I’m still not an egg lover, but at least I know I can put them down the hatch without upchucking.
HOLY HONEYCRISP. This apple was bigger than my palm. Way bigger. It was delicious. If you follow me on Instagram you might have seen my punny caption that went with this picture 😉
Savory sweet potatoes. My new all-time favorite. Pop a sweet potato in the microwave for 4 minutes. Add in salsa, black beans, cilantro and green onion. Feel free to top with greek yogurt. I’m avoiding dairy for the first part of this challenge, so I skipped it! YUUUUMMM.
More apples. This time a gala.
Lots and LOTS of kumquats. I brought a gallon bag of them home with me from Arizona.
I’m off to do some recipe development, run to the grocery store and get some work done from home! Later, gators.
