Hey guys! How was your weekend?
I spent this weekend catching up on errands, visiting Ian’s sister/brother-in-law/nephew, and cooking! I actually cooked a lot more than I usually do this weekend — we are set on leftovers for the week! I feel so much better when I make meals at home. It makes me perform better, doesn’t make me feel gross and saves me $$.
One recipe that was a real winner in Ian + I’s book is the dill chicken salad that I made on Friday.
I’m a haaaauuuuge fan of chicken salad, but I’m going to be honest…. mayonnaise grosses me out. I only like chicken salad if I can’t taste the mayonnaise. To answer your question— yes I’m the pickiest eater in all the land.
BUT, LUCKY FOR ME I created this recipe without using any of that nasty, white mayo. None, nada, ZIP. Instead I used a combination of plain, unsweetened Silk almond milk, avocado, and olive oil. Combine it with some fresh dill, chicken, walnuts and celery and Badabingbadaboom. You’ve got yourself a chicken salad that doesn’t have the fat or calories that mayonnaise does (and in my opinion tastes a whole heck of a lot better).
Avocado Dill Chicken Salad — Serves 5
1/3 c. Silk Unsweetened Plain Almond Milk
1 Tbsp Olive Oil
1 clove of garlic, minced
1/4 tsp pepper
1/2 tsp garlic salt
1 Tbsp fresh dill weed, chopped
1 rottiserie chicken
3/4 cup celery, chopped
1/3 cup of plain, unsalted almonds, chopped
1. Mash avocado in a bowl until smooth. Mix in almond milk, garlic, olive oil, salt and pepper. Whisk until smooth. Add dill. Stir until combined.
2. Cut up rotisserie chicken into bite-sized cubes. Mix in celery and almond.
3. Pour avocado mixture over chicken, celery and almonds. Mix until combined. Serve chilled.
