2 more weeks until I graduate. I can’t. even. believe. it. Time has flown by!
As far as news on the home front, I’ve been taking this week to just chill out and focus on finals, catching up from DC, and doing lots of cooking! Monday night I made this spicy chicken enchilada casserole, which is always a hit. I’ve use the recipe multiple times, but this time I added black beans and left out the avocados, simply because we didn’t have any. Womp, womp.
I also went to CrossFit Wednesday and woke up Thursday barely being able to move my arm. It was either from the WOD or holding fussy baby for 2 hours last night while babysitting. Either way, I’ve missed lifting weights!
I’ve got a short CrossFit competition tomorrow (which I forgot about until Weds…oops), and then it’s Ian’s birthday! We will be going out to dinner and hopefully out downtown, that is if I can keep my eyes open. Who’s idea was it to schedule a half marathon and a Crossfit competition all in the same week? Oh yeah, me. The genius 🙂
You probably came here for the deliciousness that is my blueberry banana breakfast bread. I had lots of extra grapefruit and bananas sitting around at my house, so I put a poll out on Facebook: blueberry banana bread or grapefruit yogurt bread? BBB was da winnnnaaaaa!
I took a spin off of my mom’s usual recipe. I switched out sugar for honey, added coconut oil instead of butter and added some CHIA SEEDS. Oh, and blues. It’s super easy to make, but takes quite a long time to cook. I originally thought it was going to take around 50… but I was wrong. 75 minutes at 350! Patience, young grasshopper. It’s worth the wait.
You could also add in nuts, if you wanted. I’m sure chopped almonds would taste delish. Give it a little ca-runch.
Eat plain. With coffee. With homemade blueberry preserves (<— great choice, btw) or with a smear of cream cheese. You can’t have banana bread without cream cheese.
I won’t tell if you don’t eat it for breakfast. I ate it before bed last night. YEEEP.
