With an hour-long commute and hectic schedule, having breakfast on-the-go is a must. Don’t get me wrong, I wish that I could sit down to a steaming bowl of oatmeal and coffee everyday while catching up on blogs. But alas, girlfriend has gotta eat on the road!
… so I made breakfast cookies. With frosting. YUM. Because who doesn’t like cookies (for breakfast)? Better yet, these bad boys kept me full for longer than an hour (the struggle…). Probably due to their nutrition content. High protein FTW!
Here’s the goods:
- 15g Protein, 190 calories, 3g fiber
- Primary protein source a blend of whey, casein and milk proteins
- Made with natural flavors
- Certified Gluten Free
Even better news, this recipe takes less than 10 minutes total to make. Badabing. I’m a happy camper!
To make, simply cut one bar into two pieces and roll them into balls. Press the balls onto a greased cookie sheet and bake for 4 minutes at 350. The topping on the bar gets ooey, gooey and delicious.
Let the cookies cool while you make the frosting. Simply combine 1 TBSP of coconut oil with one tsp of PB2. Mix together and… Bazinga! You’ve got frosting. Healthy frosting. To go with your cookie. Either spread or dunk — the world is your oyster.
Whoever said you can’t eat cookies for breakfast is obviously flat-out lying. Plus, when I eat a better breakfast, I feel better throughout the day. Your mom is right… breakfast is important.
As far as the bars go, I’ve tried the chocolate raspberry, apple cinnamon and strawberry banana. The chocolate was my favorite (no surprise there!). I wasn’t a big fan of the strawberry banana, but I’m not a huge banana person, unless it’s the real fruit.
