I’ve been downing acai bowls like CRAZY ever since getting back from San Diego a few months back (you can buy the frozen acai packets at Costco!), and have been topping them with banana, granola and shredded coconut.
I am fairly conscious about eating foods without a ton of ingredients in them, so when I realized that the granola I had been buying had a ton of unnecessary products inside, I got to work on making my own.
Turns out it’s super easy and super quick. Now I have homemade granola for everyday of the week. YIPPEE!
2 cup old fashioned oats
1 cup nuts (I used chopped almonds)
1 cup shredded coconut
2 tablespoons coconut oil
1 tablespoon honey
1. Preheat oven to 350 degrees Fahrenheit.
2. Mix all ingredients together and spread onto a large cookie sheet
3. Bake for 4 minutes. Stir granola. Bake for another 3.
4. Remove from oven + let cool!
Be sure to WATCH the granola very carefully after the 4 minutes — it burns extremely easily. I learned that lesson the hard way and charred granola. Yum. I’ve found that 7 minutes is perfect for my altitude/oven, but I would recommend just keeping an eye on it while it bakes.
Sprinkle on yogurt, smoothie bowls or just eat plain! Also, you can add basically any topping that you want. I’ve added dried cranberries and banana chips to the mix a few times, without really measuring. The world is your oyster, friends!
