SPOILER ALERT: I actually don’t drink coffee as soon as I wake up. I prefer to drink it when I’m at my desk at work or during my commute. Something about that routine puts me in the groove for computer work and checking off items on my to-do list.
There’s ONE exception to this rule — lazy mornings at the lake. As soon as I wake up I look forward to a cup of coffee and sitting on the patio with my mom and Tucker, our family’s dog.

I’m usually a black-coffee-kinda-girl, but every once in a while it’s nice to have a treat in the morning in the form of a flavored coffee or latte! To be honest, the coffee creamer at work freaks me out. What kind of “dairy” is stable on the counter? You’re telling me that I’m supposed to drink something that is cool just hanging out at room-temperature for months on in? Yeah, no thanks.
So, one weekend morning (that turned into afternoon because I was having fun, ha!), I decided to take a stab at creating my own creamers with my all-time favorite base — full-fat coconut milk!
I store these in my fridge (where most dairy should be stored, ahem) and they have been good for about 2 weeks! I don’t know if I would go much longer than that, as they have fresh ingredients and no preservatives. Good news is though, they whip up in a flash so you don’t have to spend an ample amount of time to make your cup o’ joe just perfect-o.
For the base, heat 1/2 cup of full-fat coconut milk (the kind in the can!) on a stove top. Mix in your flavor’s ingredients, bring to a boil and remove from heat, stirring constantly.
For the mocha flavor:
1 TBSP coconut sugar
1 tsp cocoa powder
For the coconut cream flavor:
1 TBSP coconut sugar
1/2 tsp vanilla extract
For the pumpkin spice flavor:
1 TBSP Coconut sugar
1 TBSP pumpkin puree
1/2 tsp cinnamon (or pumpkin pie spice!)
It’s ungodly easy to customize these coffee creamers — like caramel? Add some of that to the coconut milk! Full-fat coconut milk is for real a game-changer. Life just isn’t the same without it.
If you make your own creamer, it makes you less of a basic bitch when you drink pumpkin spice coffee all season long. #truth.
But seriously, let’s please back away from the shelf-stable pods of hazelenut coffee creamer. If you’re going to eat something full of preservatives and fake shit, make it the fake nacho cheese from Taco Bell (so bad but so so good.)
